Genji Soba – Transition to 100% Buckwheat Soba from September
We are pleased to announce that starting in September, Genji Soba will become a specialty restaurant serving only 100% buckwheat soba (juwari soba).
Currently, we hand-make both ni-hachi soba (80% buckwheat, 20% wheat flour) and 100% buckwheat soba. However, in response to the requests of our gluten-free and celiac customers, we have decided to transition our menu entirely to 100% buckwheat soba.
This change allows us to provide a dining experience that is not only authentic and traditional, but also safe and welcoming for those with gluten sensitivities.
We sincerely look forward to serving you our pure, hand-crafted soba from September onwards.
